Two Down, One to Go!

I made my Roasted Tomato Basil Soup and the sauce for the Sweet & Sour meatballs last night. The meatballs are already made because I use the frozen ones from Costco since they just need to be thawed and heated with the sauce and quite tasty to boot.
BTW, Toni couldn't wait and had a bowl of Roasted Tomato Basil Soup last night since it's one of her favorites.
So all I have to prepare today is the Spinach Artichoke Dip, a decadently warm blend of spinach, artichoke, Parmesan and Monterey Jack cheeses, heavy cream and chicken stock served with bread and tortilla chips for dipping. Yumm! :)
